The artificial ripening of fruits by using Ethylene gas is permitted under sub regulation 2.3.5 of Food Safety and Standards (Prohibition and Restrictions on Sale) Regulation 2011. Ethylene is a natural plant hormone and considered as the only safe and accepted method of artificial fruit ripening.
