Stability tests conducted in laboratory settings as well as in field distribution and storage conditions have shown that DFS is stable even in humid tropical climates with high temperatures, and is acceptable for human consumption as an alternative to iodised salt. The suggested shelf life is 12 months from the date of opening the package containing DFS. It is important to note that presence of magnesium in raw salt in excess of the quantity prescribed by FSSAI will attract moisture and may cause loss of iodine if proper encapsulation of iron is not done.
