DFS and iodised salt should be stored in the same way as common edible salt. However, as some iodine in the salt can be destroyed by prolonged exposure to direct sunlight and moisture, it is preferable to store fortified (iodised and double fortified) salt in a closed, airtight container made of plastic, wood, glass or clay, with a well-fitting lid, away from sunlight and moisture. Similarly, if salt is not packed well, some iodine loss will take place during transit from production to consumption. Therefore, fortified (iodised and double fortified) salt should be consumed within the ‘best before’ date as indicated on the package.
