FSSAI has been established under the Food Safety and Standards Act, 2006 with the objective for laying down science based standards for articles of food and to regulate their manufacture, storage, distribution, sale and import, to ensure availability of safe and wholesome food for human consumption and for matters connected therewith or incidental thereto.
For development of standards the Authority constituted a Scientific Committee and 17 Scientific Panels dealing with specific group of subjects. These bodies consist of eminent scientists of the country. The standards are developed keeping in view national interest considering latest developments in food science, food consumption pattern, new food products & additives, changes in the processing technology leading to changed specification, advancements in food analytical methods, identification of new risks, other regulatory options etc in line with international best practices which make them globally benchmarked.
Development of the standards is done in a transparent manner inviting comments from all stakeholders. The draft standards prevently open for public comments and List of standards under development are also available on the website.
So far, the Authority has developed six Regulations covering quality and safety parameters of various food products. Packaging and labelling are given under Food Safety and Standards (Packaging and labelling) Regulations, 2011.
